Have a Jolly Cauli dinner..................

And in case you didn't hear..........................

I used to make this all the time ( back in my Atkin Diet days - when I really had no business dieting )

And I really shouldn't be telling anyone this - BUT - yesterday morning when I was on my way to the wash room in my short nightie - a ray of sunlight hit my thighs - just as I was passing the mirror in the landing - and I almost fainted.

My first thought was they look like cauliflower - and that gave me the idea to make it for supper.
Inspiration comes from the strangest places around here, I'll tell ya.................

In case you're the one person in North America who hasn't tried it - here's how you do it.

Chop your cauliflower into small pieces and boil it for about 10 to 12 minutes

When draining it you have to be sure it's pretty " dry "
I always press a bowl into the colander to take out all the excess water  ( I personally prefer doing it this way but using paper towels is fine - bad for the planet but otherwise fine :)

Then you add a little butter - AND cream cheese - the cream cheese holds it together making the consistency more like mashed potatoes...........

I add a little milk and garlic powder at the end and voila - mashed potatoes cauliflower - it's delicious !!!

And much better on a plate

Than on your thighs..................

Now excuse me - I'm going to go out for a 12 hour walk
( just as soon as I finish this chocolate bar that's making it's way to my lips as I type )

  2. I am on the Atkins diet now and I fix the cauil that way. I have found lots of tricks with no carbs. I feel so much better not eating all those carbs.

  3. I used to make this all the time, too, Suzan, but never added the cream cheese- I did add heavy cream though. It's the garlic powder that is the grand finishing touch-I think. God bless Dr. Now I want some for dinner---and yes, I hear you about the mirror and the thighs! lol xo Diana

  6. I like cauli rice. I just posted about it recently. And zucchini noodles. Good ways to save those calories. Spend them on chocolate instead :-)

  8. I have noticed the great popularity of cauliflower lately and am very appreciative of how to prepare it for a potato substitute. Now, I think I shall have to try this idea too. Will regular herbed garlic flavoured cream cheese work or should it be the creamy stuff? Chocolate? Who eats chocolate.

  9. I am on the 2/5 diet, in case you're not familiar with it, you starve (500 calories only) for 2 days and eat normally the other 5. It's supposed to have all sorts of health benefits, apart from hopefully getting rid of my haunches and cauli thighs, as the science behind it is roughly (and I mean roughly as science is NOT my thing ;-) that we were designed to feast (just killed a woolly mammoth) and famine (have pigged all the mammoth and can only find a few berries). Since this sounds a bit like my eating habits anyway, especially the mammoth scoffing, I thought I might be able to stick to this one. I am very much an all or nothing kind of person anyway, I just need to make sure I don't eat three times as much on the non starving days though LMHO One plus is you can't drink on the starving days, which is giving my liver a very welcome rest. Of course you could just have a few glasses of wine and not bother to eat at all, trust me I have been tempted....It's early days so I can't say if it's going to revolutionise my life or even my thighs :-D BTW it's a starving day today and that dinner looks absolutely delicious....xxxx

    1. Never heard of it - NOR could I do it - ( although I can imagine the health benefits )
      Atkins worked incredible for me - and although it worked amazing for John ( all of his meds were drastically cut within a month - so that tells you about the crap that goes into our systems ) everyone thought he was dying - I was getting calls constantly asking if he was ok LMHO

  16. Yes chocolate has many documented vitamins and minerals and things. I'm sure I read that on the back of a box of period pain tablets once. It said 'take two with a square of chocolate, then eat the rest of the chocolate'. I'm sure it did. Mimi xxx

  17. Mashed cauliflower is a regular at my household. Want another idea? Peel & scoop a butternut squash (it's a pain, but worth it), cube it up, add sliced red onion and fresh broccoli florets, shake it all up with some olive oil, balsamic vinegar, minced garlic and bake it on a cookie sheet. It's easy to tweak to your liking.

  19. LOL I love cauliflower potatoes! Next time I make them it will be with cream cheese cuz that just makes sense! Google cauliflower rice. Haven't tried it yet but it could be good....although I am pretty sure your cream cheese version wins over rice any day.
